We have a new sweet chilli jam. It’s made by our friend Silvano Buccolini, who is famous for making sapa and a slow food nut. Slow food is no mean feat for a man who talks twenty to the dozen and has the heart rate of a small mammal. The only thing (apart from eating slowly) that mellows Snr Buccolini is the thought of people around the world enjoying his products.
When I tell him the Nudo following are going mad for his chilli jam, he stops what he’s doing, lights a cigarette, gazes out over his farm, and lets out a big bucolic satisfied sigh. Here is a Summer-inspired dish which uses a generous dollop of Silvano’s slow sweet spicy jam.
Ingredients for 4 people
Lamb chops – 8 chops (2 each or 250g per person, organic ideally)
Sweet chilli jam – 3 tablespoons
Garlic – 1 or 2 cloves
Extra virgin olive oil – 4 teaspoons
Marinade the chops in the chilli jam, olive oil and finely chopped garlic. Make sure you massage it all into the meat, and then leave it for a good half hour or more. Fry the chops on a medium heat for 6 to 8 minutes on each side, depending on the thickness. When they are done serve them up with some minted, buttered new potatoes and some greens.
